Lazy Man's Kalua Pig

Ingredients
one 4-5 lb. pork with a little extra fat
white Hawaiian salt (or rock salt)
Bar-B-Q Smoke (liquid)
ti leaves
pan of baking bananas or sweet potatoes 

Score the fat of the pork deep in about 1" squares, rub with salt and generously sprinkle Bar-B-Q Smoke over all sides of the meat and especially into the fat. Clean your ti leaves (if you can't get ti leaves, wrap in foil) and remove the tough center ribs to make leaves more pliable. Lay about six large leaves on a flat surface, place the well seasoned pork butt on top and start wrapping securely like a package, adding more leaves as needed to cover completely. Tie with either ti leaf or string.

Bake in slow 325 F oven for at least 5 hours. 

When fully cooked, open the ti leaves (foil) and broil and scored fat until it is beautifully browned and crisp. Throw in a pan of baking bananas the last half hour or sweet potatoes the last hour and a half and you have a mini luau.


Oriental Variation (simple and good too)

Ingredients
3 Tbs. Hawaiian salt (rock salt)
1/4 cup soy sauce
1 tsp. Worcestershire sauce
crushed clove of garlic
piece of crushed ginger
liquid smoke

Mix salt, soy sauce, Worcestershire sauce, garlic and ginger and rub into pork, then sprinkle with liquid smoke. Wrap and cook as above.
