Paniolo baked chicken & veggies

Ingredients
12-14 pieces of Costco thighs and legs
1 can of O'doul's
1 cup Costco Vidalia onion vinaigrette salad dressing
4 potatoes unpeeled and cut into 1\2 and scliced 3\4 inch thick
2 cups of Costco carrot,broccole,cauliflower,ect
1 lg. onion halved and sliced
6 peeled and crushed garlic cloves
2 teaspoon Hawaiian salt ."like natural rock salt"
1 teaspoon Costco restaurant pepper
3 tablespoons of virgin olive oil

Preheat oven to 450 and put the shelf in the middle. Place onions and potatoes in roasting pan pour in the entire can of O'doul's and then put the Costco chicken on top. Add the salt,pepper and drizzle the dressing on top of the chicken. Bake uncovered in the preheated oven for 30 minuets reducing the temp to 400 after the first 15 minutes. After 30 minutes turn the chicken and give the potatoes and onions a stir. Place the Costco carrot broccoli and cauliflower on top of the chicken and cover with foil and bake an additional 15 minutes. This recipe should feed 6 average kids and maybe mom and dad also.


Sweet Sour Spare Ribs

Ingredients
3 lbs. Spareribs cut in 1 1/2" pieces
2 Tbs. cornstarch; 1 Tbs. brown sugar
1 Tbs. salt
2 Tbs. soy sauce
1 clove garlic, crushed
1 slice ginger root, crushed
1/2 cup salad oil
3/4 cup vinegar (very strong-perhaps try 1/2 cup vinegar & 1/4 cup soy sauce)
2 Tbs. brown sugar
1/2 cup water

Combine spareribs, cornstarch, brown sugar, salt and soy and let stand 15 minutes or more. Saute garlic and ginger in hot oil until brown. Add spareribs, cook until browned on all sides, then pour off excess oil. Add vinegar, remaining brown sugar and water. Cook over high heat until steaming, then turn to low heat and simmer 30 to 40 minutes or until ribs are tender.
